I think the clicking sound comes from the fact that the BLTouch automatically tries to re-deploy, that's built in in the probe and not somehting you can configure. The Klipper code then pulls it up, but it might be just a little bit too slow, so it already starts re-deploying when it's done. That should probably not matter other than the sound.
